Dot Hurley's Marinated Three Bean Salad -- Family Recipe Friday
Here's a recipe from Jerry's mother, Dot Hurley, that I just came across. Sounds like a really simple mixture of tangy and sweet veggie flavors. I think I'll be mixing up some Marinated Three Bean Salad soon. I also notice that Dot made a note that this is her sister "Mil's Recipe." This one must have been a favorite if the sisters shared it. Glad I can keep passing it along here on Family Recipe Friday.
Marinated Three Bean Salad:
Drain one 1 lb. can each cut green beans, cut wax beans and kidney beans. Combine.
Add 1/2 cup chopped green pepper and celery.
Combine 1/2 cup sugar, 2/3 cup vinegar. Add 1/3 cup salad oil. Pour over vegetables.
Add 1 teaspoon salt and 1/4 teaspoon pepper.
Toss.
Chill overnight.
Drain and serve - 6 to 8 people.
